Food Halls of North America: The Sharing Economy for Restaurants

The restaurant business has always been subject to fads. One year, fish tacos are all the rage, and the next year, it’s all about better burgers. Whether it’s avocado toast or Korean street barbeque, every new concept is vying for a permanent seat at the American table.

One of the hottest trends right now in the restaurant business, and in retail generally, is the food hall. Cushman & Wakefield first reported on this trend in November 2016; since then food halls’ popularity has only continued to rise.
